cheesecake

ingredients:

  • 80g melted butter
  • 1/3 cup brown sugar
  • 200g graham crackers
  • 5 eggs
  • 1 cup sugar
  • 600g cream cheese
  • 1 lemon
  • 1 tsp vanilla extract
  • 1/4 cup corn starch

directions:

  • crush graham crackers until crumbs are a consistent size. mix in melted butter, and brown sugar (optional). spread evenly into a large cheesecake pan, over parchment paper.
  • crack 5 eggs into a large bowl with sugar. use a (hand) mixer to mix together, until white. while mixing, gradually add cream cheese. soften first if too hard. zest one lemon and add to the mix with vanilla extract and corn starch. once done, pour into cheesecake pan.
  • bake at 350 farenheit for about 40-60 minutes. do not open the oven until at least 30 minutes has passed or it may collapse. the cheesecake will be done once you see the top is slightly brown, and it will likely have cracked.

worked out very well the first time i made it... second time and in a different oven, not so much. this recipe is mostly for my future reference so don't blame me if it sucks.

ingredients:

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/3 unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

directions:

  • preheat oven to 350 degrees F (175 degrees C). butter a brownie pan.
  • melt 1/2 cup butter. stir in sugar, eggs, and vanilla extract. beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. spread batter onto pan.
  • bake for 25-30 minutes.

no pictures of these unfortunately, but my bf and i did like them! i added chocolate chunks. the pan i used was a tad too large and they didn't turn out as tall as i would have liked, so keep in mind that they won't rise much and spread the batter accordingly.
